Honey Oat Bread
Ingredients:
- 1 1/4 cups water
- 2 tablespoons vegetable oil
- 1/4 cup honey
- 3 cups all-purpose flour
- 3/4 cup rolled oats
- 1 1/2 teaspoons salt
- 2 1/4 teaspoons active dry yeast
Directions:
- In a small saucepan, heat the water, oil and honey over low heat until warm (about 120°F).
- In a large bowl, combine 2 cups of the flour, the oats, salt and yeast. Stir well to mix.
- Add the warm liquid to the flour mixture and beat with an electric mixer on low speed for about a minute, scraping the sides of the bowl as needed.
- Gradually stir in enough of the remaining flour to make a soft dough that is not sticky.
- Turn the dough out onto a lightly floured surface and knead for about 10 minutes, or until smooth and elastic.
- Place the dough in a greased bowl and turn to coat. Cover with a damp cloth and let it rise in a warm place for about an hour, or until doubled in size.
- Punch down the dough and shape it into a loaf. Place it in a greased 9x5-inch loaf pan and cover with a damp cloth. Let it rise again for about 30 minutes, or until almost doubled in size.
- Preheat oven to 375°F. Bake the bread for 25 to 30 minutes, or until golden brown and sounds hollow when tapped.
- Remove from the oven and let it cool slightly in the pan. Then transfer to a wire rack to cool completely.
